Mediterranean Pasta Salad
Serves 6. Peparation time 30 minutes. Cooking time 30 minutes.
Ingredients
350g Pasta, cooked and drained
3 medium Red onions, peeled and cut into wedges
3 Courgetts, cut in half lengthways
1 large Aubergine, cut into thick slices
1 Red pepper, de-seeded and cut into quarters
1 Yellow pepper, de-seeded and cut into quarters
Sea salt and freshly ground black pepper
To Serve
Extra virgin Olive oil
Parmesan cheese
Basil leaves, torn
Method
Preheat your grill or BBQ to a medium heat
Toss the vegetables in olive oil and season with salt and pepper
Cook the peppers first. Cook them skin side down until the skin becomes charred.Remove from the heat, peel off the skin and cut into strips and then set aside
Cook the remaining vevetables until soft and crisping at the edges. Remove and cut the aubergine and courgettes into chunks
Stir the vegetables through the cooked pasta and then pour over extra virgin olive oil
Serve topped with the parmesan and torn basil leaves
