Here in the villages of Andalucia the standard food is what is produced locally and always what is in season. The growing climate here is such that when an item is in season there is a glut, it is unavoidable and so what we eat is goverened by the time of the year. Unlike in the UK if it not in season then it is not available without travelling to a major town.
Fish, sea food, vegatables and fruit are the staples, Goats cheese is produced locally, not surprising as they are the only milk producing animals that can survive in this very dry mountainous region and the main meat found in local shops is pork or chicken. Both are very tasty as they are reared in the old fashioned, or should that now be called, organic, way. There is also an abundance of pork products such as chorizo, morcilla, salchichitas, sobrasada etc Not forgetting of course the very popular Serano ham and as all pigs rear legs go to produce this wonderful ham it is the reason that you will find it impossible to go to your local butcher and buy a "leg of pork". Still we think that is a small price to pay to live in such a beautiful part of the world. Olives and olive oil are of course esential
